ABOUT JAIME MUÑOZ
Jaime belongs to a family that has been dedicated to coffee for many generations; his father taught him the value of work and the passion for coffee. After finishing high school, Jaime started working in a garment factory near the city. After five years of hard work, his brother-in-law suggested that he work as a farm manager. Already passionate about agriculture and coffee, Jaime quickly agreed.
In 2013, he and his brother-in-law bought a property of their own in the upper part of Santa Barbara Mountain, an area well known for quality called “El Cielito.” Jaime bought 1.5 hectares there and the following year he planted it with pacas coffee. It was with this farm that Jaime began to delve into the world of specialty coffees, preparing his first micro-lot of pacas coffee in 2016.
In 2019, he had the opportunity to buy another property in the community of Las Flores (now Las Flores Farm). He planted the pacas variety there as well as it’s a variety he knows well and trusts in its quality potential. Santa Barbara pacas coffees are a great example of how a variety and terroir combine to produce exceptional coffees. These coffees very much represent the flavor of Santa Barbara Honduras.
