Gamaliel Rios Ortíz's charming coffee estate is nestled in the enchanting town of Plan de la Libertad Alta, perched at high elevation with breathtaking views of the Sierra Madre, the grown jewel of Chiapas' mountain range. For the past couple years, Gamaliel has been the heart and soul of the state, taking over operations from his father. He has focused his efforts on honing his skills in quality control, and his efforts are showing up in the cup. Only the ripest cherries are handpicked, fermented first in cherry, then in tanks before being thoroughly washed and laid out to dry on African raised beds. This gives the coffee the crisp and complex flavor profile we like to share. We've sought to carry more Mexican coffees over the last few years, but finding coffees we are excited about has been challenging. This coffee from Gamaliel represents the one of what we hope to be the first of many successes from Mexico. We are loving the heavy sweetness and subtle, complex fruit character.
