Alejandro Solis is the third generation farmer of this gorgeous 100 hectare plantation. Working with the esteemed Josue Morales (of farms Pintado and Esperanza), they’ve created a Rainforest certified and fully organic operation that features a full Vermiculture farm. These worms allow them to process all the pulp removed from the coffee during processing to create a gold-standard fertilizer. What comes out of the soil goes straight back in!

Under the shade, where the good stuff grows

Huixoc renovated the farm over the course of five years starting in 2012 where over a million new coffee trees were planted. During this time, they focused heavily on adding large amounts of protection from shade trees. Not only do these trees help protect the coffee trees from the heavy rains and sunlight that are common to the region, they also bolster the soil strength, preventing degradation and even allow for slower ripening of the coffee fruit, which helps to increase cup quality.
