Specialty coffees from Mexico have been growing in esteem in recent years, which is great news for those of us just north of the border. We’ve been most impressed by the diverse growing environments in Oaxaca, where many indigenous groups with tiny farms—like a hectare or smaller—contribute to larger community lots. This coffee in particular comes from a producers’ group of only fifteen farmers, the majority of whom are women.

Small farms, huge flavor

The dedicated growers of San Francisco Ozolotepec have produced an absolutely vibrant coffee, with intense tropical fruit notes and a crisp, malic acidity. These smallholder farmers—like most in Oaxaca—grow primarily Bourbon, Typica, and their natural cross, Mundo Novo coffee varieties, and process them on their own small farms. This coffee was dry fermented from 36-72 hours to enhance sweetness, then washed and dried on woven petate mats.
