About Santos Pablo Payas

In the past, Santos’ family produced only a tiny amount of coffee, just enough for them to enjoy at home and sell a bit. Eight years ago, they invested in a new parcel of land that had some poorly maintained coffee plants growing, and have worked hard to improve coffee quality and quantity. Santos is also part of El Sendero Co-op, which focuses on gender equality among coffee producers and especially supports young coffee producers.

A Family Affair

Coffees from Huehuetenango are from the highest elevations in Guatemala, and are considered the best in the country. Santos and his family live at 2100 meters, even higher than the farm itself, and where their wet mill is located. Cool temps allow for a slow dry fermentation of 26-48 hours. Coffee is washed and soaked before patio drying, a method rare for this region. The family's slow, carefully monitored process gives this lot its outstanding profile.
