Jaime belongs to a family that has worked in coffee for generations, learning the value of hard work and a love for the crop from his father. After high school, he spent five years working in a garment factory before his brother-in-law offered him the chance to manage a coffee farm. Jaime jumped at the opportunity, eventually purchasing his own land in 2013 in El Cielito, high on Santa Barbara Mountain. There, he planted Pacas and began producing his first specialty coffee microlots just a few years later.

In 2019, Jaime purchased another property in the community of Las Flores and once again planted Pacas, a variety he knows deeply and trusts for its quality and character.

 This is our fourth year working with Jaime, and each harvest has become sweeter, cleaner, and more expressive. For this washed lot, we taste juniper, clover honey, and Fig Newton, with a layered sweetness and structure that makes it especially compelling as espresso.
