Luz Divia, who goes by the nickname Sandy, grows some 50,000 Pink Bourbon trees with her husband Elpido in the vereda of Berlin in Huila. Pink Bourbon is a variety that has exploded in popularity recently for its disease resistance and unique fruit punch and pink lemonade flavors. It's become a staple for specialty farmers in Colombia. Luz uniquely uses a fermentation process where day pickings are added to each other, creating a mélange of fermentation times, and resulting in flavors of tropical fruits, papaya, banana, watermelon with Kenyan coffee-like characteristics like red currant and cherries.
